One of my favorite go to summer dishes, this crusted salmon dish is super easy and quick to make on top of being light and healthy. I recommend serving it with a side of baked asparagus for a complete meal that takes roughly 20 minutes to make.

Ingredients:

¼ cup Butter

3 Tbs Dijon mustard

1 ½ Tbs Honey

¼ cup Bread Crumbs

1 Tbs Almonds - Finely Chopped

1 Tbs Fresh Parsley

4 Salmon Filets

1 Lemon

Directions:

Preheat oven to 400F. In a small bowl, stir together butter, mustard, and honey. In another bowl mix together bread crumbs, almonds, and parsley. Mix half of the dry mixture into the honey mixture keeping the other half for later.

Coat each salmon filet with the honey mustard mixture. Sprinkle remaining dry mixture on top of each to create golden crust. Bake salmon for 12 minutes or until your liking.Serve with a lemon wheel.
